Sift
Two scoops through the sifter — no clumps, ever.
Pour
60 ml of water at 80°C. Not boiling — matcha turns bitter.
Whisk
Move the chasen in a "W" until a dense foam forms.
Transfer
Into your tumbler — matcha stays cold for 12 hours.
